    Black Tea is grown mostly in China, Sri Lanka, Malawi and India. Some teas are produced in a high grown estate from 300 - 900 feet above sea level. This tea grows hardy in a warm climate when the mountain condensation triggers a monsoon. This climate offers better soil conditions, therefore producing the finest Estate Black Tea.

     Camellia Senensis, the true name for our favorite drink

    All tea comes from the same plant, camellia senensis. There are virtually only two varieties of this species that create most of the world's tea. The shorter and smaller leafed camellia senensis which is grown in China, will produce tea for 110 - 115 years, however it's height is no more then 15 feet high. The Assam, which is an offspring of China's tea plant, will reach 60 feet, and has a life span of roughly 50 years.

    Both types of camellia senensis favor a hot climate with lots of sun and plenty of moisture. Mountainous regions such as India's Darjeeling, Sri Lanka's Uva and China's Yunnan, grow the best tea with a more concentrated flavor.

    Tea gardens, estates and plantations, range in size from a small exclusive plot, to a huge estate that covers a complete hillside in a carpet of green. The branches of the camellia senensis are pruned on an on-going basis in order to intensify growth and will then produce a high-end harvest.

             Darjeeling Tea- Learn about the Champagne of Tea.

    Darjeeling Tea blend is considered to be the "champagne of tea". Darjeeling Tea is produced during the end of February to early March, through to December. The 1st Flush is in early March and the 2nd Flush is in June.

    The flavor and taste profile of Darjeeling Tea is muscatel in character and has almost a perfumed taste. The 1st Flush appears to lighter once steeped compared to the 2nd Flush. The larger leaf grades produce the best Darjeeling Tea. The smaller leaves tend to loose the distinctive muscatel character. This all time favorite tea is at its best when sipped as a splendid afternoon tea.

    Darjeeling Tea is so highly regarded, however it is considered to be "pricey", many packers and blenders (with rather questionable ethics), blend this tea with other lower grade tea and still refer to them as "authentic" Darjeeling Tea, however be aware!

                      Russian tea, find out why it is so popular.

    The two primary beverages in Russia are Russian Tea and Vodka. Russia was introduced to tea in the mid 1600's, by the Chinese. A treaty agreed on by the Chinese Emperor and Russian Czar made it possible for trade caravans to pass between the two empires.

    Tea was sought after in the Russian lifestyle, as it was a hot and dark brew. Russian Tea was the preferred drink and was sweetened with honey, sugar or jam.

    A samovar was invented, which serves as a heater and also boils the water with which to brew a pot of Russian Tea.

    Typical Russian Tea is a mixture of three different flavors. These teas are brewed in separate pots, then mixed together and diluted with water. The teapots are stacked on top of one another enabling the Russian Tea to stay hot for hours. Russian Tea is sipped from a podstakanniki, which are silver holders that contain hot-tempered glass.

                                 A Brief History of Chinese Tea.

    The first written transcript that was discovered on the history of Chinese Tea was in 350 A.D. Kuo P'O, updated the Chinese dictionary adding the word tea as "a beverage made from boiled leaves". According to the history of Chinese tea, these leaves were boiled in water with ginger, oranges and spices.

    In the history of Chinese tea, it was believed tea was consumed for medicinal purposes to treat stomach problems and nervous twitches. The Chinese population in the interior part of China used the tealeaves and pressed them into bricks and used it as currency to trade and barter with.

    The demand for tea increased dramatically from 350 to 600 AD, when farmers began to plant and harvest the tea. Tea estates were primarily in Szechwan, than spread throughout China. The history of Chinese tea has clearly shown China's love for tea and has made it one of China's major export resources.

        Ming & Ching Tea Dynasty - The naturalistic period of tea

    During the Ming & Ching Tea Dynasty, both the rich and poor consumed tea. A book titled "Voyages and Travels" was written by Gaimbattista Ramusio, explaining the health benefits discovered in drinking tea.

    In the year 1606, a Dutch East India Company imported the first shipment of Chinese grown tea.

    The Ming & Ching Tea Dynasty grew rapidly throughout Europe, Africa and the Orient. In the year 1773, the Boston Tea Party occurred. The cause of the Boston Tea Party was due to the U.S Colonists were protesting taxation of tea by Great Britain.  In the harbor, a Dutch East India ship was boarded and the cargo of tea was dumped into the water.

    The Ming & Ching Tea Dynasty introduced making tea by adding the loose tea leaves to the hot water. Different methods of processing tea began, and the result led to different types of teas such as: green, oolong and black tea.

        Sung Tea Dynasty, the Romantic Period (690 - 1279 AD).

    During this era, the affair with tea became very intiment, thus began the Sung Tea Dynasty. As the harvest season began, sacrifices were made to the mountain deities. Tealeaves were picked by the pickers to the rhythm of the drums.

    In the Sung Tea Dynasty, the young female tea pickers had to keep their fingernails a certain length, so that the leaves did not touch their skin. Once the leaves were picked and graded, only the superior grades were given as a gift to the Emperor. During the Sung Tea Dynasty, tea was broken off of a tea brick, ground into powder, and was added to hot water.

    The Sung Tea Dynasty celebrated tea at a social and spiritual level by building tearooms and teahouses. Ceremonies on tea were conducted on the quality of tea, the water used, and the brewing method. The Sung Tea Dynasty was the introduction to ceramic tea equipment. Tea bowls with deep blue glazes with lines down the side of the bowl, were called "rabbits fur", and was very common during the Sung Tea Dynasty.

    Japanese Green Tea Ceremony

    In Japan, Japanese green tea ceremonies have been completely influenced by the grand Tea Masters. The Buddhist philosophies, preparation of meals, gardening and other duties have relied on green tea.     The water is poured from the kettle into the drinking bowl, two scoops of green tea powder are added, and then it is whisked to a frothy mixture. With both hands clasping the bowl, the guest is then allowed to sip the tea. Japanese green tea ceremonies have been honoured for centuries and are considered to be a unique and enlightening experience.                                 Green Tea, where is it grown?

    Green Tea is produced mostly in China, Taiwan and Japan. Japan's tea production is amongst the highest in the world, reaching yields of 1500 pounds per acre. Japan exports 1 - 2 percent of its harvested Green Tea. The primary producing area is in the Shizuoka prefecture, which is south of Tokyo.

    China's Green Tea is produced at elevations of 2500 - 4500 feet above sea level. One of the Green Teas that China is known for is their Jasmine Balls. The leaves of this Green Tea are tied together and the center leaves are cut while the remaining outer leaves are long. The leaves are then carefully rolled into a tight round ball. The tea is then steamed and dried with fresh jasmine flowers, which intern gives the cup a delicate flavor and aroma.

    Some of the Green Teas are rare and only available for picking 2 - 3 weeks each year. Once the leaves are infused, it takes on a pale green color and has a very sweet aftertaste.

    Green tea weight loss - The easy way to lose weight through Green Tea.

    Scientific research has tooted green tea as an amazing plant that has great potential in offering green tea weight loss to obese people. At the University of Geneva, Switzerland, clinical trials have appeared to confirm green tea weight loss raises metabolic rates and speeds up fat oxidation.

    Ten healthy men were chosen as subjects in this research, none of which, were obese, they ranged from lean to slightly overweight body frames. A typical North American non-weight loss diet averaging 40% fat was prescribed during this research, and each subject was assigned at random three meals per day containing one of three treatments: green tea weight loss diet, 50 mg. of caffeine, and a placebo capsule. Each of the subjects was confined for 24 hours in a respiratory chamber where thermogenesis and energy expenditure was carefully measured. When it was gauged, the subjects themogenesis showed a 4% increase, which indicated the overall expenditure of those on green tea weight loss, had increased by 4.5%.

    Since caffeine is know to increase the heart rate rhythm and the caffeine in coffee is much greater, a green tea weight loss program is proving to be a powerful medical alternative.

    Oolong Tea - Why do they call it the Sweet Monkey Tea?

    Oolong Tea is primarily grown in Taiwan and the Fujian province in China. Oolong Tea is semi-fermented and the leaves are easily recognized by their stout and crinkled appearance. Some of the finest and best Oolong Tea is grown on very steep mountain slopes. It is produced in trees that can reach the height of 90 feet and only trained monkeys can pick the leaves.     Recently, a study was done in Japan with patients that suffer from severe eczema. The results were 63% of the patients that drank 3 cups of Oolong Tea per day had a dramatic reduction from their topical eczema, and the rest had a notable decrease.                Rooibos plant makes a healthy choice tea.

                   Tea Filters - A simple way to steep your tea.

    It's time to learn more about using tea filters. In today's "long hours and less pay" working world, we are finding out that more and more people are using chlorine free and unbleached paper tea filters. Most people are aware of the health benefits in drinking loose-leaf tea, however many working offices do not have the proper facilities for employees to prepare a proper cup of tea.

    Tea filters are used as a sachet to put your loose-leaf tea in, and then you put this sachet into a cup and add boiling water. When the tea has steeped to your liking, you simply lift the filter out of the cup and dispose of it, this is an environmentally safe practice and most tea emporiums or specialty tea shops carry what is commonly known as T-sacs.

           How the tea you purchase is graded by a tea blender.

    A tea blender is a person whom is hired by the tea auctioneers. Their duty is to ensure that the tea to be auctioned has not been damaged or contaminated with before the bidding begins, and this is done by inspecting and tasting the tea. It is common for a tea blender to taste anywhere from 200-1200 different blends of tea per day. The main purpose is to confirm that the quality remains consistent.

    Tea brokers act as an intermediary to their client's behalf. Once the tea blender is assured the tea is of an excellent quality, the bidding begins according to the grade. An experienced tea blender can tell you all there is to know about tea. They are so skilled that they can confirm the height the tea was grown, the time of day the tealeaves were picked and the weather elements on that particular day. Most auctions are subdued affairs where a gentleman remains a gentleman.

                    Present day tea - Sit and sip for a while

    Today's present day tea is the most sought after beverage in the world, after water.

It is considered a fine art in preparing for a tea ceremony, and the Lu Yu Tea Institute is the leader in the research of present day tea. The Chinese tea culture is one of the longest and most respected traditions recorded.

    Matcha Tea

    Matcha tea has been in existence since the Song dynasty (1127 - 1280).  Matcha tea is considered to be the most highly respected ceremonial tea of the famous Tea Masters. It is green tea leaves that is ground into a very fine powder. One teaspoon of the Matcha is placed into a clay bowl and 8 ounces of boiled water is added.  A bamboo whisk is whipped until small tiny bubbles appear and the colour looks almost emerald green.  One hand is placed under the bowl and the other is wrapped around the bowl allowing the sipping of the Matcha tea to occur.
     
    Matcha tea is considered to contain the highest amount of antioxidants and flushes out free radical cancer cells.  It has been noted to give a person energy and is very high in potential vitamins.
     
    The Urasenke Foundation was formed in May of 1949, where the foundation marked a commitment by the Urasenke family to continue with the Way of Tea. Tantansai, the fourteenth generation Urasenke grand tea master admitted that although the Way of Tea is a distinct Japanese accomplishment, it's foundation of values and ideas can be universally understood.
